Fresh Garden Salsa

Garden SalsaOne of my favorite, healthy snacks to make is homemade pita chips and salsa.  There’s nothing better than fresh salsa (especially when I can add as much cilantro as I want).  In addition to being healthy and fat free, it’s also inexpensive when your vegetables are home grown.  Here’s another recipe that can be changed up depending upon your preferences.  It can be hotter (depending on the pepper you use), sweeter (by adding fruit) and you can add as much cilantro as you’d like (oh I mentioned that already didn’t I?) – or none at all (although that would just be silly).

Fresh SalsaIngredients:
2 cups tomatoes (or a combination of tomatoes, and/or fruit – such as peaches or mangoes)
1/3 cup chopped onion (I prefer red)
2(+) tablespoons chopped cilantro
2 tablespoons lime juice
1 (or more depending on the heat you like) green, jalapeno or serrano pepper, seeded and chopped
Salt to taste

Place all ingredients into a bowl and toss.  Can be served chilled (which I prefer) or at room temperature.

 

I also like to add fresh corn kernels when they’re in season.

This year I decided to can a few jars of my salsa. I used the same ingredients above, but followed a canning recipe that called for the mixture to be heated, then followed the canning instructions.  The Ball website is a great source for canning newbies like me.
