Skewered Strawberry Caprese Salad

*1-2 pints of organic (freshly picked are super sweet) strawberries
*Approximately 1 cup mozzarella balls (goat cheese would be great with this too)
*Basil leaves
*Chocolate” Balsamic Vinegar


Alternate strawberries, basil leaves, and mozzarella balls onto skewers ( I like the shorter skewers or cutting the 12″ in half).  Arrange on serving dish and drizzle with Chocolate Balsamic.

*If you love the taste of chocolate covered strawberries, you’ll love this Balsamic Vinegar for a healthier alternative. Balsamic is  made from grapes and is fermented in wooden barrels (like wine).  The longer it ages, the thicker and more intense the flavor – meaning you don’t need to use as much for a great punch in flavor.  One tablespoon of Balsamic equals only 14 calories!!  There are plenty of health benefits as well.  I found this article on LiveStrong very useful in my quest towards better health.

You probably won’t find Chocolate Balsamic Vinegar on your local grocers shelf, so find a shop with a staff that’s knowledgeable and offers a quality “wholesome” product.  Here in the Hudson Valley, I shop at The Blue Olive Shop in Pawling, NY.  Their shop offers a wonderful selection of Extra-Virgin olive oil, and both White and Dark balsamic vinegar – AND it’s a tasting bar, so you can sample anything before you buy it.  Their website is coming soon, but in the meantime, you can find them on The Blue Olive Shop Facebook Page.  They take orders and ship anywhere!!
